If you want to make bread that looks good as well as tastes good, this is a brilliant addition to any baker’s kit. Dust the bowl with rice flour, to avoid any of your dough sticking whilst it proves, stick the little hat on and gently flip your bread over and bake the next day. I dusted the top before scoring in a square pattern and I was really pleased with the result (see photo).

The first time I used it I could not get the loaf out of the lined basket despite flouring it well and had to discard the lining which had opened at the seam anyway.
